Chicory Cichorium intybus L., also known as wild chicory, is a perennial herbaceous plant in the Asteraceae family. Native to the Mediterranean region of Europe, it is also cultivated in all other temperate regions and semi-arid zones worldwide.
In ancient Rome, Greece and Egypt, the plant was used as a vegetable and pasture plant to stimulate metabolism and digestion. The use of chicory root as a coffee substitute dates back to the 16th century.
Chicory (root) is a rich source of vitamins and minerals, as well as bioactive compounds such as inulin, sesquiterpene lactones, coumarin derivatives, cichoric acid and phenolic acids, which exert powerful beneficial effects on the health of the human organism. This plant aids digestion by improving bile secretion. It also increases appetite. It is most often used to relieve gastrointestinal disorders.
