Mate Ilex paraguariensis A.St.-Hil. is an evergreen tree of the Aquifoliaceae family that grows in subtropical forests near the Atlantic Ocean (Brazil, Paraguay and Argentina).
Mate leaves have been popular for centuries in South America, and are infused to make stimulating drinks or for their health benefits.
Mate contains polyphenols (chlorogenic acid), xanthines (theophyllines, theobromine, caffeine), purine alkaloids, saponins, flavonoids, amino acids, minerals and vitamins (C, B1 and B2).
